mornin' glory muffins


so my favorite food thing i have been doing lately are these amazing muffins.. i do a batch about once a week and take one with me each morning on my hike with tucker. i have tried lots of variations, based on things i have in the cabinets, this is a very versatile recipe..

2 cups ap flour
1 1/4 cups sugar
2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. salt
2 cups shredded carrots
1/2 cup raisins *
1/2 cup walnuts *
1/2 cup unsweetened, flaked coconut
1 apple- shredded
3 eggs + 1 yolk
1 cup vegetable oil
2 tbsp. vanilla

*so here is the fun part. one time i did extra apples and ginger and pecans. another time i added dried cherries. i have made it standard to drop in a big handful of sunflower seeds, and this last time i threw in some fresh blueberries.

you can mix all this in a big bowl.. i always bake at 375- time depends on the size of muffins or loaf. enjoy!

  1. I am def going to make these once I get a formidable kitchen. You need to share one of the dried cherry-blueberry variants with me ASAP! How about adding some shredded apricots, too? Are they less oily than the ones at CE?
